Oaty Banana Muffins

Ingredients

For 12 muffins

  • 190g plain flour
  • 80g oats
  • 100g sugar
  • 2 tsp baking powder
  • 1tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 egg
  • 180ml milk
  • 80ml oil
  • 1/2 tsp vanilla
  • 225g mashed banana

Method

  1. Pre-heat oven to gas mark 6 (200c)
  2. Combine: flour, oats, sugar, baking powder, baking soda, salt
  3. In another bowl, beat egg, stir in milk, oil, and vanilla
  4. Add the banana to the wet ingredients and mix
  5. Make a well in the dry mixture and pour in the wet mixture. Mix until combined – don’t over-mix
  6. line a muffin tray with cases and divide the batter between them
  7. Bake for 20 minutes
