Ingredients
For 12 muffins
- 190g plain flour
- 80g oats
- 100g sugar
- 2 tsp baking powder
- 1tsp bicarbonate of soda
- 1/2 tsp salt
- 1 egg
- 180ml milk
- 80ml oil
- 1/2 tsp vanilla
- 225g mashed banana
Method
- Pre-heat oven to gas mark 6 (200c)
- Combine: flour, oats, sugar, baking powder, baking soda, salt
- In another bowl, beat egg, stir in milk, oil, and vanilla
- Add the banana to the wet ingredients and mix
- Make a well in the dry mixture and pour in the wet mixture. Mix until combined – don’t over-mix
- line a muffin tray with cases and divide the batter between them
- Bake for 20 minutes
